Not every product makes sense as a last-minute add. You might want customers to add accessories and refills, but not a large item with its own shipping rules. Which products can be searched decides what the Add a product search can find.
The three choices

Whatever you choose, a product must also be Active, published to the customer's market, and available for sale. With Hide out-of-stock products on, products with no option in stock are left out too.
Limit the search to collections
In Tacey, open Editing Tools, click Set up tools on the Thank you page card, and click Set up next to Add a product to your order.
Under Which products can be searched, choose Specific collections.
Under Collections, click Choose collections in Shopify and pick one or more.
Click Save.
A product that belongs to any one of the chosen collections is searchable.
Limit the search to tags
Open the same page and choose Specific tags.
Under Tags, click Add a tag.
Type in Search tags to find one of your existing product tags and pick it. If the tag does not exist yet, choose Create "your-tag".
Repeat for more tags, then click Save.
A product that carries at least one of the tags is searchable. If you have many tags, the list shows your first set and says "Narrow this down in Shopify to see more."
Important: an empty scope shows nothing
If you choose Specific collections or Specific tags and then add nothing, customers see no products at all. The page warns you: "Nothing chosen yet. Your customers will see no products until you add a collection" (or a tag). This is on purpose: an empty list is treated as "nothing allowed", never as "everything".
Switching back to Every product
Choosing Every product clears your saved collections or tags. If you switch back to a scoped mode later, pick them again. When you switch between collections and tags, Tacey keeps only the entries that make sense for the mode you chose, so a stale collection never hides your whole catalog under the tags mode.
How it is enforced
The scope is not only a filter on the search list. When a customer confirms an add, Tacey reads the product fresh from Shopify and checks it against your scope again. A product outside it is refused, even if someone sends a request directly without using the search.
Messages you may see
"Every active product is searchable. There is nothing to scope here." You chose Every product.
"This collection no longer exists in your store. Remove it." A chosen collection was deleted in Shopify.
"We could not load your product tags right now. Reload the page to try again."
What this does NOT do
It does not hide products by price or type. Use a collection or a tag to group the products you want.
It does not change what Recommended for you shows. That tool has its own rules and default, and does not use this scope.
It does not read customer tags. Tags here are product tags.
